May 20th: Yellowstone NP > Salt Lake City, UT

Unfortunately, my friends had to fly back home so we spent the day driving to Salt Lake City from Yellowstone because the Jackson airport is closed until mid-June while they re-pave the runway. Before they left, we were able to try a SLC staple and another Diners, Drive-ins & Dives spot! Red Iguana, and the first time we had Mexican food on the trip. I think it was ok, the uniqueness may be in the atmosphere and the decorations of the place.

May 21st: Today was my first solo day out west! Sad that my friends had to leave but excited that I had the whole day to explore SLC. So I took myself out to brunch at the cutest restaurant called Oasis Cafe. They had great patio seating, and a bookstore attached. I bought Desert Solitaire by Edward Abbey to read. I wanted to try the Baked German Pancake but they were all out.

Afterwards I discovered the City Creek shopping center downtown and spent a few hours there. That’s what the first photo of this feed is from. After shopping, I went to Fisher Brewing. A spot with a really interesting history! They were one of Utah‘s first breweries to open in 1884 but closed during prohibition, eventually in 2017, someone reopened it and kept the original branding but now it’s employee-owned. The space was really awesome too. I didn’t do much else after that in Salt Lake. The Airbnb I was in was on Capitol Hill so I was right in the heart of it. Tomorrow I drive to Jackson, WY again.
